Salmon and spinach pasta in cream sauce is a quick lunch or dinner ready in 30 minutes. The salmon cubes are briefly seared in a skillet, then finish cooking in the cream to stay juicy. Fresh spinach goes in at the end and only needs to wilt, while Parmesan and lemon zest add flavor to the sauce.

Cook the pasta
Cook the pasta in salted water until al dente according to the package directions, usually 10–11 minutes. Reserve ½ cup of the pasta water before draining.
Prepare the salmon
Cut the salmon into cubes about 2 cm wide and season with salt and pepper. Finely chop the onion and press the garlic.
Sauté the onion and salmon
Heat the olive oil in a skillet and sauté the onion for 3 minutes. Add the garlic and salmon and cook for 2–3 minutes, turning gently so the salmon cubes do not fall apart.
Make the sauce
Pour in the cream, bring to a gentle simmer, and cook for 3 minutes. Add the spinach and stir until wilted. Stir in the Parmesan, lemon zest, and lemon juice.
Toss with the pasta
Add the drained pasta and, if the sauce is thick, a little of the reserved pasta water. Toss gently and serve immediately.
Tip: Baby spinach takes up a lot of space, so add it a handful at a time, letting each handful wilt before adding the next.
