Salmon in puff pastry is a festive baked fish dish: spread cream cheese over a sheet of puff pastry, top with wilted spinach and a whole salmon fillet, then wrap and bake until golden. The pastry keeps the fish from drying out, and the finished parcel is cut into thick slices.

Instructions
Tip: tap a step to mark it as done.
Wilt the spinach
5 minBriefly sauté the chopped garlic in the olive oil, then add the spinach and let it wilt. Squeeze out the water, season with salt, and let cool.
Wrap the salmon
10 minPreheat the oven to 200 °C (400 °F). Unroll the pastry sheet onto parchment paper. Mix the cream cheese with the lemon zest, spread it down the center of the pastry, and top with the spinach. Season the salmon with salt and pepper and place it on top. Fold the pastry over the fish, press the edges together to seal, and turn the parcel seam-side down.
Bake
30 minBrush the top with beaten egg, cut several slits in it, and bake for 25–30 minutes at 200 °C (400 °F), until the pastry is golden and puffed.
Serve
5 minLet rest for 5 minutes, then cut into thick slices.
Tip: Squeeze the spinach well and let it cool completely; warm, wet spinach would make the bottom of the pastry soggy.
