Salmon with chili, capers and sun-dried tomatoes is a baked fish dish with bold, spicy, salty flavors. Skin-on fillets are brushed with olive oil, seasoned with salt, and topped with chopped capers, sun-dried and cherry tomatoes, and chili peppers. Buttery mashed potatoes are served alongside; the recipe calls for an oven with a steam function to cook them. The method is a little more involved, but makes lunch for four.

Peel the potatoes, cut them into small cubes, place in a perforated tray, and season with salt. Cook in a preheated oven on the Moist Steam setting at 96 °C (205 °F) for 30–40 minutes.
Blend the cooked potatoes with the butter and warm milk, then season with salt to taste. Keep the mashed potatoes warm while the salmon bakes, or reheat them in the oven before serving.
Remove any scales and bones from the salmon, leaving the skin on. Place the fillets on a baking sheet lined with parchment paper, brush with olive oil, season with salt, and top with chopped capers, sun-dried and cherry tomatoes, and chili peppers.
Insert a temperature probe into the center of a fillet and set it to 65 °C (149 °F). Bake in a preheated oven on the Hot Steam setting at 190 °C (375 °F).
Divide the baked fish into portions and serve with the mashed potatoes.
Tip: You can also cook the potatoes for the mash in a pot of salted water. If you don't have a temperature probe, the salmon is done when it flakes easily in the center and is no longer translucent.
