Pork loin chops with sweet potatoes make a one-pan meal: roast cubed sweet potatoes with red onions first, then top with seared pork chops and finish roasting together. The sweet potatoes soak up the meat juices and caramelize around the edges.

Roast the sweet potatoes
20 minPreheat the oven to 210 °C (410 °F). Peel the sweet potatoes and cut into roughly 2 cm cubes. Cut the onions into wedges. Toss with 3 tbsp of the oil, the paprika, thyme, whole garlic cloves, and half the salt. Roast in a roasting pan for 20 minutes.
Sear the pork chops
8 minPat the pork chops dry with a paper towel and season with salt and pepper. Heat the remaining oil in a skillet over high heat and sear the chops until golden brown on both sides, about 2 minutes per side.
Finish roasting together
15 minPlace the pork chops on top of the sweet potatoes and roast for another 12–15 minutes, until the meat is cooked through and the sweet potatoes are tender.
Tip: Pork loin is lean, so do not roast it for longer than 15 minutes or it will dry out. Let the meat rest for 3 minutes before slicing.
