Pork loin kebabs with onions and tomatoes are a way to enjoy grilled-style meat even when the weather won't cooperate. Cut the meat into cubes about 4 to 5 cm across, season with salt and pepper, and mix with separated onion layers and grated tomatoes, which you can replace with canned tomatoes in their own juice. Then bake the meat at 200°C (400°F) for about 40 minutes. The recipe uses just four ingredients and serves eight.

Instructions
Tip: tap a step to mark it as done.
- Cut the meat into 4–5 cm cubes and season with salt and pepper.
- Cut each onion into 4 wedges, separate the layers, and add them to the meat.
- Peel the tomatoes and grate them using the medium holes of a grater, or substitute canned tomatoes in their own juice. Add the tomatoes and their juice to the meat.
- Let the meat marinate for at least 30 minutes, ideally overnight.
- Thread the meat onto skewers, alternating with the onion.
- Arrange the skewers close together in a baking dish so they cook evenly. Bake in a preheated oven at 200°C (400°F) for 40 minutes.
Tip: Cut the tomatoes in half and grate them cut-side down; the skins will stay in your hand, so you won't need to peel them. Soak wooden skewers in water beforehand to keep them from scorching in the oven.
