Instructions

Tip: tap a step to mark it as done.

  1. Shape the meatballs

    15 min

Mix the ground chicken with the crushed garlic, ginger, breadcrumbs, and salt. With damp hands, shape into about 20 walnut-sized meatballs.

  2. Brown the meatballs

    6 min

Brown the meatballs on all sides in 1 tbsp of the oil; they do not need to be cooked through yet. Remove them from the pan.

  3. Make the sauce

    20 min

Sauté the finely chopped onion in the remaining oil, then add the curry powder and stir briefly. Pour in the coconut milk and tomatoes, season with salt, and return the meatballs to the pan. Cover and simmer for 15 minutes, until the meatballs are cooked through.

  4. Serve

Sprinkle with cilantro leaves and serve with rice.

Tip: Toast the curry powder in the oil only briefly, just until fragrant; cooking it longer would make it bitter.
