Chicken in creamy mustard sauce with carrots is a variation on simply sautéed chicken that also makes a nice Sunday lunch. Marinate the chicken breast strips in soy sauce and curry powder for at least two hours, or overnight. Then sauté them with onion and grated carrot and simmer until cooked. Finish the sauce with sour cream, Dijon mustard, and regular mustard, and simmer briefly with the chicken.

Trim the chicken, pat dry, and cut into thin strips. Mix with all the marinade ingredients and refrigerate for 2 hours or overnight.
Heat the oil in a skillet and sauté the finely chopped onion until golden. Add the coarsely grated carrot and the chicken and sauté over low heat. Sprinkle with 1 tbsp all-purpose flour and cook briefly, stirring.
Pour in the hot water, season with salt and pepper to taste, and simmer the chicken. Finally, stir in the sour cream mixed with 1 tbsp flour and both mustards. Cook for 1 more minute to thicken the sauce.
Serve with rice or mashed potatoes.
Tip: Temper the sour cream and flour mixture with a spoonful of hot pan juices first so it blends into the sauce without curdling. The soy sauce marinade makes the chicken salty, so add salt cautiously.
