Chicken schnitzel in mustard marinade is a variation on the classic fried schnitzel, in which the pounded meat is brushed with mustard and left to marinate in the refrigerator for at least an hour before breading. The mustard gives the schnitzels a more pronounced flavor and the meat stays juicy. Then comes the traditional coating in flour, egg beaten with milk and breadcrumbs, and frying in a pan on both sides.
The recipe makes two servings; serve them with your favorite side dish.

Instructions
Tip: tap a step to mark it as done.
Cut the meat into slices and pound them thin. Brush one side with mustard (or both sides, if you like) and season the other side with salt and pepper. Cover the meat and let it marinate in the refrigerator for at least an hour. Whisk the eggs with the milk.
Coat the meat first in flour, then in the egg and finally in the breadcrumbs. Heat the oil in a frying pan and fry the schnitzels in it for 3–4 minutes on each side, until golden brown and the meat is cooked through.
Tip: Test the oil temperature with a few breadcrumbs: when they sizzle immediately, you can add the schnitzels. Don't stack the finished ones on top of each other, because the steam would soften the crispy coating.
