These oven-baked, yogurt-marinated chicken cutlets with cheese are an alternative to fried breaded cutlets, with no frying needed. Marinate the cutlets for at least two hours, preferably overnight, in yogurt, eggs, mustard, garlic, lemon juice, and a pinch of ground chili. Then coat them in breadcrumbs mixed with grated cheese, top each with a slice of butter, and bake for about 45 minutes at 180°C (350°F). Serve with potatoes prepared however you like.

Instructions

Tip: tap a step to mark it as done.

  1. Pat the chicken dry with a paper towel, cut it into cutlets, and gently pound if needed. Mix all the marinade ingredients together, add the cutlets, and let marinate for at least two hours, ideally overnight.

  2. Line a baking sheet with parchment paper. Remove the cutlets from the marinade, leaving as much marinade on them as possible. Coat them in the breadcrumbs mixed with the grated cheese and place on the baking sheet.

  3. Place a slice of butter on each cutlet and bake in an oven preheated to 180°C (350°F) for about 45 minutes, turning the cutlets halfway through baking. Serve with potatoes prepared however you like.

Tip: Grate the cheese as finely as possible so it mixes evenly with the breadcrumbs and helps the coating stay on the cutlets when you turn them.
