These chicken cutlets in a mayonnaise, mustard and honey marinade are baked without an egg, flour or breadcrumb coating. Thinly pounded chicken breast slices marinate for one to two hours in mustard, oil, crushed garlic, honey and mayonnaise, which you can season with paprika or a pinch of chili. They then bake for about 40 minutes at 180°C (350°F). The meat stays juicy, with less mess in the kitchen than traditional breading.

To make the marinade, combine the mustard, sunflower oil, crushed garlic, liquid honey and mayonnaise. Season with salt and pepper to taste; sweet paprika or a little chili also works well. Mix thoroughly.
Pat the chicken dry with a paper towel and cut it into thin slices.
Cover the slices with a plastic bag or similar covering and pound them thoroughly. Place them in a deep bowl, pour the marinade over them and let marinate for 1–2 hours.
Arrange the chicken on a baking sheet lined with parchment paper and pour the remaining marinade over it. Bake in an oven preheated to 180°C (350°F) for 40 minutes.
Serve the cutlets with your favorite sauce and a vegetable salad.
Tip: Honey in the marinade browns quickly during baking, so place the baking sheet in the middle of the oven rather than on the highest rack. If the honey has crystallized, warm it briefly first so it mixes more easily with the mustard and mayonnaise.
