Roasted pork belly with a honey, mustard, and ketchup marinade is a simple meat dish that lets the marinade and oven do most of the work. Massage a mixture of soy sauce, ketchup, mustard, and honey into the salted meat, then let the pork belly rest in the refrigerator for several hours. Roast at 170 °C (340 °F) for about an hour and a half covered with foil, then uncover and roast for another half hour until crisp. Serve with any side dish or accompaniments you like.

Instructions

Mix the soy sauce, ketchup, mustard, and honey in a bowl.
Season the pork belly with salt, place it in the bowl, pour the prepared marinade over it, and massage the marinade thoroughly into the meat.
Let the meat marinate in the refrigerator for several hours. Once it has absorbed the marinade well, transfer it to a baking dish, drizzle with a little oil, and cover with foil. Roast in a preheated oven at 170 °C (340 °F) for about 90 minutes, until tender.
Remove the foil and roast uncovered until crisp, about 30 minutes. The finished meat should be tender, with no pink in the thickest part and clear juices; otherwise, continue roasting. If using a thermometer, the center of the meat should reach 70 °C (158 °F) for at least 2 minutes or 75 °C (167 °F) for 30 seconds (according to the UK's Food Standards Agency, FSA).
Tip: The honey and ketchup darken quickly once the foil is removed. Watch the pork belly toward the end of roasting, and cover it with foil again if it starts to burn before it becomes crisp.
