Honey mustard pork slices bake in one pan with potatoes and onions, so the side dish cooks along with the meat. The pork is coated with a mixture of crushed garlic, mustard, honey, and oil, then arranged over sliced potatoes and onions. Bake covered with foil at 200 °C (400 °F) until the potatoes are tender, then uncover and bake for another ten minutes. If you have time, let the pork marinate overnight.

Instructions
Tip: tap a step to mark it as done.
- Crush the garlic and mix with the mustard, honey, balsamic vinegar, oil, salt, and pepper. Coat each slice of pork evenly on both sides with the mixture.
- Peel and slice the potatoes, then spread them on a baking sheet or in a baking dish with the sliced onions. Arrange the pork slices on top. Tip: If you have enough time, let the pork rest in the marinade overnight.
- Cover with foil and bake in an oven preheated to 200 °C (400 °F) until the potatoes are tender and the meat begins to release its juices. Remove the foil and bake for another 10 minutes.
Tip: Before adding the meat, season the potatoes and onions with salt and toss with a little oil, as the marinade alone will not season them enough. Cut the potatoes into slices of equal thickness so they become tender at the same time beneath the meat.
