Instructions

Tip: tap a step to mark it as done.

  1. Prepare the beef slices

Pat the beef dry with a paper towel, cut it into slices, and pound them thin. Season with salt and pepper, then spread a thick layer of mustard on one side of each slice. Stack the slices so the mustard coats the other side as well.

  2. Sear the beef

Heat the oil until hot and sear the beef slices on both sides over high heat, then transfer them to the pressure cooker. Finely chop the onions, sauté them in the pan drippings, and add them to the beef.

  3. Pressure-cook

Pour the water into the skillet, add the bouillon cube, and bring to a boil. Pour over the beef. Close the pressure cooker and cook the beef for about 30 minutes.

  4. Thicken the gravy

Remove the beef. Thicken the gravy as needed with the all-purpose flour mixed with cold water, bring to a boil, and return the beef to the gravy. Serve with rice, mashed potatoes, French fries, or potato croquettes.

Tip: Slice the beef round across the grain for more tender meat after cooking. Open the pressure cooker only after the pressure has fully released.
