New potatoes marinated in soy sauce, honey, and mustard make a special side dish that turns golden brown in the oven. The whole potatoes are boiled in salted water until partially tender, drained, and left to cool. They are then coated in a marinade of soy sauce, honey, mustard, oil, crushed garlic, and green herbs and roasted at 200°C (400°F). There is no need to salt the marinade because the soy sauce is salty enough, and you can leave out the honey if you do not like it.

Instructions

Tip: tap a step to mark it as done.

  1. Wash the potatoes and place them whole in a pot. Cover with water, add salt, and boil until partially tender.
  2. Drain the partially cooked potatoes and let them cool. Meanwhile, prepare the marinade: mix the soy sauce, honey, mustard, green seasoning, crushed garlic, and oil in a bowl.
  3. Do not salt the marinade, as the soy sauce is salty and the potatoes were cooked in salted water. Use blossom honey, or leave it out if you do not like it.
  4. Leave the potato skins on if desired. Cut the potatoes, add them to the marinade, toss to coat, and let stand for 2 hours. Grease a roasting pan with oil, lift the potatoes out of the marinade, and arrange them in the pan. Roast at 200°C (400°F) until browned on top.
  5. Serve the potatoes warm with your favorite sauce.

Tip: You can boil the potatoes a day ahead and refrigerate them overnight. Once completely cool, they slice without crumbling and hold their shape in the marinade.
