Pork chops with new potatoes make a sheet-pan meal: roast the potatoes with garlic and rosemary first, then add the seared pork chops. Finish roasting the meat and potatoes together so the potatoes soak up the meat juices.

Instructions
Tip: tap a step to mark it as done.
Roast the potatoes first
25 minPreheat the oven to 200 °C (400 °F). Wash the new potatoes and halve any larger ones. Cut the onion into wedges. Arrange the potatoes, onion, unpeeled garlic cloves, and rosemary on a sheet pan with 3 tbsp of the oil and half the salt. Roast for 25 minutes.
Sear the pork chops
6 minPat the pork chops dry and season with the remaining salt, black pepper, and paprika. Heat 1 tbsp of oil in a skillet and sear the chops on both sides until golden brown.
Finish roasting together
20 minNestle the pork chops among the potatoes and roast for another 15–20 minutes, until the chops are cooked through and the potatoes are golden and tender.
Serve
Serve straight from the sheet pan, squeezing the roasted garlic out of its skins onto the potatoes.
Tip: Don't peel the new potatoes; just scrub them clean with a brush. Their thin skins turn crisp in the oven.
