Sear the pork chops
8 minPreheat the oven to 180 °C (350 °F). Pat the pork chops dry with a paper towel, season with salt and pepper, and sprinkle with paprika. Heat 1 tbsp of the lard and sear the chops for 2 minutes on each side.
Prepare the sauerkraut
7 minSlice the onion into half-moons and sauté in the remaining lard. Add the sauerkraut and caraway seeds and stir briefly. Spread the sauerkraut in a roasting pan, place the pork chops on top, and pour in the water.
Bake
55 minCover the roasting pan and bake for 40 minutes at 180 °C (350 °F). Uncover and bake for another 15 minutes, until the chops are tender and lightly browned.
Serve
Serve with boiled potatoes or Slovak bread dumplings and the pan juices.
Tip: Taste the sauerkraut before baking; if it is too sour, stir in a tablespoon of sugar or a grated apple.
