Skillet new potatoes with garlic, dill, and green onions are a simple side dish made with young potatoes. First, crushed garlic is cooked in oil until golden, then removed, leaving the oil infused with its flavor. The potatoes are browned in the oil, then cooked under a lid until tender. Finally, they are salted, drained of excess oil, and sprinkled with chopped dill and green onions. The entire preparation takes about 40 minutes.

Instructions
Tip: tap a step to mark it as done.
Pour the sunflower oil into a deep skillet and heat over low heat. Add the crushed garlic. Wash the potatoes and cut any larger ones into smaller pieces. Once the garlic is golden, remove it from the skillet.
Add the potatoes to the skillet so they absorb the garlic flavor. Wash and finely chop the dill and green onions. Once the potatoes are browned on the bottom, stir them, cover, and cook for 2–3 minutes.
Once the potatoes are tender, season with salt and remove the skillet from the heat. Drain off the excess oil, transfer the potatoes to a deep serving bowl, sprinkle with the chopped herbs, and serve.
Tip: Thoroughly dry the washed potatoes with a kitchen towel before adding them to the skillet; wet potatoes will splatter in the hot oil and will not develop a golden crust.
