New potato soup with dill and cream is a simple seasonal soup that makes use of new potatoes from the store or your own garden. The potatoes and carrots are first briefly sautéed in butter with the lid on, then covered with vegetable broth and seasoned with basil and oregano. Small potatoes can go into the pot whole; larger ones are simply halved. Cream and a bunch of fresh dill finish the soup.

  8. Tip: You do not need to peel the potatoes; you can make the soup with the skins on.

Tip: Rub the dried basil and oregano between your fingers directly over the pot to release more aroma. Stir them while sautéing, as they can easily burn in the butter.
