Pork chops with white beans make a hearty one-pan lunch: sear the chops until golden, then simmer them with cooked beans in a tomato sauce with garlic and rosemary. The beans soak up the meat juices. Soak the beans the day before.

Instructions

Tip: tap a step to mark it as done.

  1. Soak the beans

Rinse the beans, cover with cold water, and let soak overnight.

  2. Cook the beans

    1 hr

Drain the beans and cover with fresh water. Cook without salt for about 1 hour, until tender. Drain.

  3. Sear the pork chops

    10 min

Pat the pork chops dry and season with salt and pepper. Sear in the oil until golden on both sides. Remove the chops. Sauté the onion and garlic in the pan drippings.

  4. Simmer

    15 min

Add the tomatoes, beans, rosemary, and water. Season with salt and return the pork chops to the pan. Cover and simmer for 12–15 minutes, until the meat is cooked through.

Tip: The beans can still be slightly firm before simmering—they will finish cooking in the tomato sauce with the pork chops.
