White beans and frankfurters make a hearty dish of soaked dried white beans, cooked until tender and then simmered in a thick tomato sauce with onion, sweet paprika, and sliced frankfurters. It is reminiscent of cafeteria-style beans or a homemade version of beans in tomato sauce.

Soak the beans
Rinse the beans, cover with plenty of cold water, and let soak overnight.
Cook the beans
1 hrDrain the beans, cover with fresh water, and add the bay leaf. Cook without salt for about 1 hour, until tender. Reserve 200 ml of the cooking liquid and drain the rest.
Make the sauce
10 minFinely chop the onion and sauté in the oil until golden. Stir in the paprika, tomato paste, and tomatoes. Add the sugar and 200 ml of the reserved bean cooking liquid and simmer for 5 minutes.
Combine
10 minAdd the beans and sliced frankfurters. Season with salt and pepper, add the marjoram, and simmer for 10 minutes, until the sauce thickens. Remove the bay leaf and serve with bread.
Tip: For a quicker version, use two cans of white beans instead of dried beans and skip the bean-cooking step.
