Bacon-wrapped trout is roasted whole: fill the cavity with garlic and thyme, wrap the fish in bacon, and roast with new potatoes on one sheet pan. The bacon keeps the fish from drying out and adds a smoky flavor.

Instructions

Tip: tap a step to mark it as done.

  1. Start roasting the potatoes

    20 min

Preheat the oven to 200 °C (400 °F). Wash the potatoes and halve any larger ones. Toss with the oil and half the salt, then roast on a sheet pan for 20 minutes.

  2. Prepare the trout

    10 min

Pat the trout dry and season the cavities with salt and pepper. Place sliced garlic and a sprig of thyme inside each cavity. Wrap each trout in three slices of bacon.

  3. Roast together

    20 min

Place the trout among the potatoes and roast for 18–20 minutes, until the bacon is crisp and the flesh near the backbone separates easily.

  4. Serve

Serve with the potatoes and lemon wedges.

Tip: Salt the inside of the trout lightly, as the bacon will season the outside.
