These honey-mustard potatoes are a side dish made with boiled, skin-on potatoes coated in a tangy marinade before roasting in coconut oil. The marinade combines soy sauce, Kremser mustard (sweet-sour Austrian-style mustard), honey, crushed garlic, Italian herbs, and coconut oil. There is no need to add salt because the soy sauce is salty enough. Cut the potatoes into wedges, let them sit in the marinade, then roast at 200 °C (400 °F) until golden and crisp. Serve with meat, poultry, fish, or a vegetable salad. You can also leave out the honey.

Instructions
Tip: tap a step to mark it as done.
- Wash the potatoes thoroughly and place them whole, with their skins on, in a pot of water. Bring to a boil, lightly salt the water, and simmer until tender. Drain and let cool slightly.
- For the marinade, mix the soy sauce, honey, mustard, dried herbs, crushed garlic, and oil in a bowl. Do not add salt, as the soy sauce is salty and the potatoes were cooked in salted water.
- The honey has a strong flavor that can overpower the other ingredients, so omit it from the marinade if desired. Cut the potatoes into wedges, add them to the bowl of marinade, and let stand.
- Roast the potatoes with a little oil at 200 °C (400 °F) until golden.
Tip: Coconut oil solidifies at room temperature, so melt it before adding it to the marinade and coat the potatoes while they are still lukewarm. The oil would solidify on cold potatoes.
