Potatoes roasted in a honey-soy marinade are a side dish that pairs well with meat or vegetable dishes. The potatoes are first boiled in their skins, sliced, and left to soak up a marinade of honey, soy sauce, mustard, garlic, herbs, and oil. They then turn golden and crisp on the outside in the oven at 200°C (400°F). There is no need to add salt to the marinade, as the soy sauce is salty enough.

Instructions
Tip: tap a step to mark it as done.
- Place the washed, whole, unpeeled potatoes in salted water and boil until tender. Drain and let cool.
- Make the marinade: mix the soy sauce, honey, mustard, dried herbs, crushed garlic, and oil in a bowl. Do not add salt; the soy sauce is salty enough, and the potatoes were cooked in salted water.
- Slice the cooked potatoes without peeling them. Toss with the marinade in a bowl and let stand briefly to absorb the flavors.
- Grease a baking sheet with a little oil or line it with parchment paper. Arrange the potatoes on the sheet and roast at 200°C (400°F) until golden.
- Serve the roasted potatoes on their own with homemade tartar sauce or as a side dish with meat.
Tip: With three tablespoons of honey, the marinade darkens quickly toward the end of roasting, so watch the potatoes closely during the final minutes. Do not pour the leftover marinade from the bowl onto the baking sheet, as it would burn.
