Instructions

Roast covered
1 hr 30 minPat the duck legs dry with paper towels, score the skin in several places, and season lightly with salt. Place them skin-side up in a roasting pan, add 200 ml water, cover, and roast in a preheated oven at 160 °C (325 °F) for 1 hour 30 minutes.
Make the glaze
5 minMix the honey with the soy sauce, pressed garlic, and ginger.
Glaze the duck legs
25 minIncrease the oven temperature to 200 °C (400 °F), drain the fat from the roasting pan, and brush the duck legs with the glaze. Roast uncovered for 20–25 minutes, brushing with the glaze twice more, until the skin has a dark, glossy crust. Meanwhile, cook the rice according to the package directions.
Serve
Serve the duck legs with the rice, sprinkle with sliced scallions, and drizzle with the pan juices.
Tip: Honey glaze burns easily, so brush it on only during the last 25 minutes and cover the duck legs with aluminum foil if they get too dark.
