Duck legs with plums are first roasted covered at a lower temperature until tender, then uncovered to crisp the skin. Fresh plum halves roast in the pan juices with cinnamon and honey for the last 20 minutes, creating a sweet-tart sauce for the meat. Serve the duck legs with Slovak steamed dumplings or lokše, thin Slovak potato flatbreads.

Instructions

  1. Season the duck legs

    10 min

Pat the duck legs dry with paper towels. Score the skin in several places to help the fat render, then season all over with salt and pepper.

  2. Roast covered

    1 hr 30 min

Place the duck legs skin-side up in a roasting pan, pour in 200 ml water, and cover with foil or a lid. Roast in an oven preheated to 160 °C (325 °F) for 1 hour 30 minutes. Baste with the pan juices halfway through.

  3. Add the plums

    25 min

Halve and pit the plums. Increase the oven temperature to 200 °C (400 °F), pour off some of the fat from the roasting pan, and arrange the plums around the duck legs. Drizzle the plums with honey and sprinkle with cinnamon. Roast uncovered for 20–25 minutes, until the skin is crisp and the plums are soft.

  4. Serve

Serve the duck legs with the plums and pan juices, accompanied by Slovak steamed dumplings or lokše, thin Slovak potato flatbreads.

Tip: Pour the rendered duck fat into a jar and refrigerate it. Use it to roast potatoes or add it to the dough for lokše, thin Slovak potato flatbreads.
