Instructions

Tip: tap a step to mark it as done.

  1. Make the sauce

Bring the soy sauce and honey to a boil in a small skillet. Reduce the heat to low and cook, stirring constantly, until the honey has completely dissolved, about 5 minutes. Stir in the ginger and remove from the heat.

  2. Prepare the chicken

Place the chicken breasts on a cutting board, cover with plastic wrap, and pound lightly. Season both sides with freshly ground black pepper. Debone the thighs and cut them into slices.

  3. Sear and simmer

Heat the oil in a large skillet over high heat and sear the chicken for about 3 minutes per side. Reduce the heat, slowly pour in the prepared sauce, and simmer until the chicken is tender and cooked through.

  4. Thicken the sauce and serve

Transfer the chicken to a cutting board and let it drain. Simmer the sauce over low heat for about 3 more minutes, until slightly thickened. Slice the chicken crosswise, pour the sauce over it, and sprinkle with finely chopped green onions.

    Serve with rice.

Tip: Soy sauce is very salty, so do not salt the chicken; use reduced-sodium soy sauce for a less salty dish. Stir the honey constantly while cooking, as it burns easily at higher temperatures.
