Indonesian chicken satay consists of thin strips of chicken breast threaded onto skewers and brushed with spicy peanut sauce. The flavor base is onion sautéed with peanuts, sambal oelek chili paste, soy sauce, ginger, and lemongrass, then thinned with broth and peanut oil. The chicken is roasted or grilled for just three to four minutes per side. Serve the remaining sauce with the cooked skewers.

Instructions

Tip: tap a step to mark it as done.

  1. Peel and finely chop the onion. Heat 2 tbsp peanut oil in a skillet, add the onion and peanuts, and season with sambal oelek chili paste, soy sauce, ginger, and lemongrass. Cook over low heat for 5 minutes, stirring constantly.
  2. Gradually add a little water or chicken broth until the mixture is smooth. Stir in 2 tbsp peanut oil to make a thick sauce.
  3. Cut the chicken breasts into thin strips about 15 cm long and thread them onto skewers. Brush the chicken with the sauce and roast or grill for 3–4 minutes per side. Serve the remaining sauce with the chicken.
  4. Tip: If you are short on time, use store-bought satay sauce.

Tip: Pour the sauce for brushing the raw chicken into a separate bowl so the brush does not touch the sauce you will serve with the cooked skewers. Thread the strips onto the skewers in a wavy pattern so they do not curl up during cooking.
