Lentil soup with ginger and smoked bacon is a hearty soup that pairs the sweetness of carrots and lentils with the bite of ginger. The base is onion, garlic and ginger sautéed in oil, followed by bacon browned with tomato paste, carrots, celery root and broth. The soup is seasoned with curry powder, sweet paprika, cilantro, caraway seeds and a tablespoon of apple cider vinegar.

Sprinkle with chopped parsley before serving and serve with bread.

Instructions

Tip: tap a step to mark it as done.

  1. Peel and finely chop the onion, garlic and ginger. Peel the carrots and celery root. Cut the celery root into 2 cm pieces and the carrots into 1 cm pieces.
  2. Heat the oil in a large pot and sauté the garlic, onion and ginger. Add the diced bacon and tomato paste and cook briefly to brown. Stir in the carrots and celery root, pour in the broth and cook for about 5 minutes. Add the rinsed red lentils and simmer over low heat for about 15 more minutes, until the lentils are tender. If the soup is too thick, add a little hot water.
  3. Season the soup with curry powder, sweet paprika, cilantro, caraway seeds, salt, ground black pepper and vinegar. Serve in cups, sprinkled with parsley.

Tip: After stirring in the spices, let the soup simmer gently for a few more minutes to bring out their aroma. Add the vinegar at the very end, as prolonged cooking would cause it to evaporate.
