Chicken thigh curry with red lentils is a hearty one-pot meal: brown pieces of boneless chicken thigh with onion, ginger, and curry powder, then simmer with red lentils, tomatoes, and coconut milk. The lentils break down and thicken the sauce. Serve with rice.

Instructions

Tip: tap a step to mark it as done.

  1. Brown the chicken

    10 min

Pat the chicken dry with a paper towel, cut into pieces, season with salt, and brown on all sides in the oil.

  2. Add the aromatics

    5 min

Add the finely chopped onion and sauté until translucent. Add the garlic, ginger, and curry powder and cook, stirring, for 1 minute.

  3. Simmer

    20 min

Add the rinsed lentils, tomatoes, coconut milk, and 300 ml water. Cover and simmer for 20 minutes, until the lentils are tender and the chicken is cooked through. Stir occasionally.

  4. Serve

Season to taste with salt, sprinkle with cilantro leaves, and serve with rice.

Tip: Briefly toast the curry powder in oil until fragrant to bring out its flavor more effectively than simply stirring it into the sauce.
