Chicken patties with red lentils are juicier than regular patties: cooked red lentils and grated carrot help retain moisture and make them more filling. Pan-fry the patties and serve with mashed potatoes or a vegetable salad.

Instructions

Tip: tap a step to mark it as done.

  1. Cook the lentils

    15 min

Rinse the lentils and cook in 250 ml water for 10–12 minutes, until they break down and absorb the water. Let cool.

  2. Make the mixture

    10 min

Combine the ground chicken with the cooled lentils, finely grated carrot and onion, pressed garlic, egg, parsley, salt, and pepper. With damp hands, shape into 10 patties and coat in breadcrumbs.

  3. Pan-fry

    15 min

Pan-fry the patties in the oil over medium heat for 6–7 minutes per side, until cooked through.

Tip: Let the lentils cool before adding them to the mixture; warm lentils would soften it and cause the patties to break apart when flipped.
