Instructions

Tip: tap a step to mark it as done.

  1. Bulgur

    15 min

Pour the hot broth over the bulgur, cover, and let stand for 15 minutes to absorb the liquid. Fluff with a fork.

  2. Kofta mixture

    10 min

Mix the chicken with the grated onion, pressed garlic, parsley, cumin, paprika, and salt. With damp hands, shape into 12 oblong koftas.

  3. Pan-sear

    12 min

Heat the oil in a skillet. Cook the koftas over medium heat for 10–12 minutes, turning to brown all sides, until cooked through.

  4. Sauce and serving

Mix the yogurt with the pressed garlic and salt. Serve the koftas over the bulgur, drizzled with the yogurt sauce.

Tip: The chicken mixture is softer than a beef mixture, so shape the koftas with damp hands and turn them in the skillet only once they have browned on the bottom.
