Chicken legs with couscous make a Moroccan-style lunch: roast the legs with cumin, cinnamon, and garlic, brush with honey toward the end, and serve with couscous, dried apricots, and toasted almonds. The sweetness of the apricots complements the spiced chicken.

Season the chicken
10 minPreheat the oven to 200 °C (400 °F). Mix the oil with the cumin, cinnamon, paprika, pressed garlic, and salt. Pat the chicken legs dry with a paper towel and rub them with the mixture.
Roast
45 minPlace the chicken legs skin-side up in a roasting pan and roast for 40–45 minutes, until cooked through. Brush with honey toward the end of roasting so the skin turns golden.
Prepare the couscous
10 minToast the almonds in a dry skillet and chop them coarsely. Pour the hot broth over the couscous, cover, and let stand for 5 minutes to absorb the liquid. Fluff with a fork and stir in the chopped apricots, almonds, parsley, and lemon juice.
Serve
Serve the chicken legs over the couscous, drizzled with the pan juices.
Tip: Brush the chicken legs with honey only toward the end of roasting; if roasted too long, the honey would blacken on the skin and turn bitter.
