Mujadara is a simple Middle Eastern dish: brown lentils and bulgur are cooked together with cumin and topped with plenty of slowly browned onions. The onions give it a sweet flavor, so be generous with them. Serve it with plain yogurt or a vegetable salad.

Instructions
Tip: tap a step to mark it as done.
Cook the lentils
20 minRinse the lentils, add 800 ml water, and cook for 15–20 minutes, until almost tender. Do not drain.
Brown the onions
25 minMeanwhile, thinly slice the onions into half-moons. Cook in 4 tbsp of the oil over medium heat, stirring occasionally, for 20–25 minutes, until dark brown and soft.
Add the bulgur
20 minAdd the bulgur, cumin, remaining oil, salt, pepper, and one-third of the browned onions to the lentils. Cover and cook over low heat for 15 minutes, until the bulgur absorbs the water. Let stand, covered, for 5 minutes.
Serve
Fluff with a fork, spread the remaining onions over the top, and serve with yogurt.
Tip: Cook the onions slowly, and do not salt them at the start—the salt would draw out their moisture, causing them to steam rather than brown.
