Layered chicken with potatoes, carrots and sesame is a baked dish for Sunday lunch with a restaurant-style presentation. Slice the chicken breasts as thinly as possible, then layer them in a baking dish with onion and carrots sautéed in oil and thinly sliced potatoes. Brush each layer of chicken with beaten egg and sprinkle with herbs. Top with sesame seeds and bake for 30 to 40 minutes at 180 °C (350 °F).

Instructions
Tip: tap a step to mark it as done.
Using a sharp knife, slice the chicken breasts as thinly as possible. Season both sides with salt and pepper.
Wash and peel the carrots, onion and potatoes. Finely dice the onion and thinly slice the carrots and potatoes. Sauté the onion and carrots in a little oil.
Grease the bottom of a baking dish with lard or oil. Arrange a layer of chicken in the dish, brush with beaten egg, then add vegetables and herbs.
Continue layering in the same way, remembering to brush each layer with egg to keep the dish moist.
Finish with a final thin layer of chicken breast and sprinkle with sesame seeds. Bake for 30 to 40 minutes in an oven preheated to 180 °C (350 °F).
Keep the dish covered while baking and check it periodically. Serve with a fresh salad or roasted potatoes.
Tip: Chicken breasts are easier to slice thinly if you put them in the freezer briefly first. Uncover the dish for the last 10 minutes so the sesame seeds on top turn golden.
