Rice noodles with chicken and vegetables are a wok dish made with strips of chicken breast, eggs, carrots, bell pepper, and napa cabbage in a sauce of soy sauce, honey, garlic, and ginger. You don't need to boil the noodles: just cover them with boiling water for 10 minutes, then finish cooking them in the sauce in the pan. Coat the chicken in a teaspoon of cornstarch before stir-frying to keep it juicy.

Instructions

Tip: tap a step to mark it as done.

  1. Soak the noodles

    10 min

Place the rice noodles in a bowl and pour boiling water over them to cover completely. Let soak for 8–10 minutes, until pliable but still firm. Drain and rinse with cold water to keep them from sticking together.

  2. Prepare the chicken

    5 min

Cut the chicken breasts into thin strips, toss with 1 tablespoon of soy sauce and the cornstarch, and let stand while you prepare the vegetables.

  3. Cut the vegetables

    5 min

Cut the carrot into thin matchsticks, the bell pepper into strips, the napa cabbage into shreds, and the scallions into rounds, keeping the white and green parts separate. Finely chop the garlic. In a cup, mix the remaining 4 tablespoons of soy sauce with the honey, sesame oil, and water.

  4. Stir-fry the chicken

    5 min

Heat 2 tablespoons of oil in a wok or large skillet over high heat. Stir-fry the chicken for 4–5 minutes, until it turns white and the edges brown. Transfer to a plate.

  5. Scramble the eggs

    2 min

Add the remaining oil to the pan, crack in the eggs, stir quickly, and let them set into soft curds. Transfer to the plate with the chicken.

  6. Stir-fry the vegetables

    4 min

Add the carrot, bell pepper, scallion whites, garlic, and ginger to the pan and stir-fry for 2–3 minutes. Add the napa cabbage and stir-fry for another minute; the vegetables should stay crisp.

  7. Combine and serve

    3 min

Add the noodles, chicken, eggs, and sauce. Toss constantly for 2–3 minutes, until heated through and the noodles absorb the sauce. Sprinkle with the scallion greens, sesame seeds, and red pepper flakes to taste, and serve immediately.

Tip: Don't let the noodles soften completely while soaking; they will finish cooking in the sauce. If they start sticking to the pan, add a tablespoon of water and stop tossing them briefly.
