Layered chicken with potatoes and mushrooms is a main dish made with thinly sliced, pounded chicken breasts stacked in a roasting pan. Brush each layer of chicken with beaten egg and alternate it with a filling of potatoes, red pointed pepper, button mushrooms, and cheese. You can also vary the filling with ham, bacon, or a pickle. Sprinkle the top with sesame seeds and bake directly in the roasting pan without a mold. It makes a Sunday lunch for four.

  1. Trim the chicken breasts, slice them horizontally as thinly as possible with a sharp knife, and pound them thin.

  2. Boil the potatoes in their skins until tender, then peel and thinly slice them. Thinly slice the onion, red pointed pepper, and mushrooms, and grate the cheese.
  3. Arrange the first layer of chicken slices in the bottom of a roasting pan and brush each slice with beaten egg. Between the layers of chicken, arrange the potato slices, onion, pepper, mushrooms, and cheese, adding pickles, bacon, or ham if desired. Brush each new layer of chicken with egg.

  4. Sprinkle the final layer of chicken breasts with sesame seeds. Bake at 180°C (350°F) for 20–30 minutes, then increase the temperature to 200°C (400°F) and bake for another 10 minutes.

  5. Serve the finished layered chicken.

Tip: Pound the chicken slices through plastic wrap to an even thickness so they cook at the same rate. Let the chicken stack rest for about 10 minutes before slicing to keep the layers from falling apart.
