Potato-crusted chicken breasts are a baked dish in which thin slices of chicken are covered with raw grated potatoes and sour cream. The chicken is first topped with onion sautéed with button mushrooms, tomato wedges, and scallions. The potato layer, spread with seasoned sour cream, turns golden when baked at 180 °C (350 °F). This dish works well for Sunday lunch, and you can vary the ingredients depending on what you have in the refrigerator.

Instructions
Tip: tap a step to mark it as done.
Trim the chicken breasts and pat them thoroughly dry with a paper towel. Cut into thin slices, arrange in an oiled baking dish, and season with salt and pepper to taste.
Sauté the finely chopped onion with the mushrooms in a skillet, then spread over the chicken.
Arrange the tomatoes, cut into wedges, on top and sprinkle with finely chopped scallions.
Spread the coarsely grated raw potatoes over the scallions, then spread sour cream over the entire surface. Season the sour cream with salt and pepper to taste, if desired.
Place the baking dish in a preheated oven and bake at 180 °C (350 °F) for about half an hour. The baking time depends on the thickness of the chicken, so check it periodically.
Serve with rice, boiled potatoes, or a vegetable salad.
Tip: Spread the potato layer thinly and evenly so it softens in half an hour. To check, lift a small piece of the crust with a knife—the chicken slices underneath must be white, with no pink juices.
