Pearl barley with chicken and mushrooms shows that this somewhat overlooked ingredient can be more than the breakfast porridge many remember from their grandmothers. Rinse and soak the barley in the evening, then cook it the next day with butter and salt until the water evaporates and the mixture thickens. Meanwhile, cook onion, pieces of chicken breast, and button mushrooms in a skillet.
This dish serves four as a filling lunch. Remember to start preparing it a day ahead.

Instructions
Tip: tap a step to mark it as done.
- In the evening, rinse the pearl barley thoroughly, cover with cold water, and soak overnight.
- The next day, rinse the barley again and transfer it to a pot. Add water no higher than the level of the barley. Add the butter and salt and bring to a boil. Reduce the heat and cook uncovered until the mixture thickens. Once all the water has evaporated, remove from the heat and let stand briefly in a warm place.
- Meanwhile, heat the oil in a skillet and sauté the finely chopped onion until translucent.
- Add the chicken breasts, cut into thick strips.
- Once the chicken is seared on the outside, add the mushrooms, cut into small pieces, and let simmer. Season with salt and pepper. When the chicken is cooked through, stir in the cooked barley and mix well.
- Tip: Add your favorite herbs or spices to taste. Serve warm.
Tip: For more flavor, cook the barley in chicken broth instead of water, adding salt carefully. Once the water has almost evaporated, keep a close eye on the barley, as it can quickly stick to the bottom of the pot.
