Carp fillets with barley risotto make a lunch that shows carp isn't just for Christmas: cook pearl barley risotto-style with button mushrooms and onion, and pan-fry the carp fillets in butter, skin-side down. Scoring the skin helps the fillets cook evenly and makes the tiny bones barely noticeable.

Instructions

Tip: tap a step to mark it as done.

  1. Barley

    45 min

Sauté the finely chopped onion and sliced mushrooms in the oil until the released liquid evaporates. Add the rinsed barley and cook, stirring, for 2 minutes, then gradually add the hot broth. Cook, stirring occasionally, for about 40 minutes, until the barley is tender. Stir in the butter and Parmesan.

  2. Carp

    10 min

Pat the fillets dry with a paper towel, score the skin crosswise at intervals of about 5 mm, and season with salt and pepper. Pan-fry in the hot butter, skin-side down, for 5–6 minutes. Turn and cook for another 2 minutes.

  3. Serve

Divide the risotto among plates, place the fillets on top, and sprinkle with the parsley.

Tip: Score the carp skin at close intervals to cut through the tiny bones and make them barely noticeable when eating. Scoring also keeps the skin from curling.
