Roasted chicken legs with apricots make a sweet and savory summer lunch: roast the legs with red onion and rosemary, then add fresh apricot halves and brush the skin with honey for the last 20 minutes. The apricots release their juices, which mingle with the pan drippings.

Season the chicken
10 minPreheat the oven to 200 °C (400 °F). Pat the chicken legs dry with a paper towel, rub with the oil, season with the salt and pepper, and place skin-side up in a roasting pan. Arrange the onions, cut into wedges, and the rosemary around the chicken, then pour in the water.
Roast
30 minRoast for 30 minutes.
Add the apricots
20 minHalve the apricots, remove the pits, and arrange them cut-side up between the chicken legs. Brush the chicken with the honey and roast for another 15–20 minutes, until the chicken is cooked through and the apricots are tender.
Serve
Serve with the pan juices. Rice or bread goes well with the chicken.
Tip: Choose firm apricots, as overripe ones will fall apart. Out of season, use canned apricots and add them only for the last 10 minutes.
