Chicken legs with sweet potatoes make a one-pan dinner: the chicken roasts until the skin is crisp alongside cubed sweet potatoes and red onion wedges. Season with sweet paprika, thyme, and garlic; the sweet potatoes soften as they roast and caramelize around the edges.

Season the chicken
10 minPreheat the oven to 200 °C (400 °F). Pat the chicken legs dry with paper towels. In a bowl, mix 2 tbsp of the oil with the paprika, thyme, half the salt, and the pepper. Rub the mixture all over the chicken legs.
Prepare the sweet potatoes
5 minPeel the sweet potatoes and cut them into cubes about 3 cm across. Cut the onions into wedges. In a roasting pan or on a sheet pan, toss the sweet potatoes and onions with the remaining oil and salt and the unpeeled garlic cloves. Spread in a single layer.
Roast
50 minNestle the chicken legs among the sweet potatoes, skin-side up, and roast for 45–50 minutes at 200 °C (400 °F). Stir the sweet potatoes once halfway through. The chicken legs are done when the skin is crisp and the juices run clear when the thickest part near the bone is pierced.
Serve
Serve immediately, straight from the roasting pan. Squeeze the roasted garlic out of its skin and spread it over the sweet potatoes if desired.
Tip: Take the chicken legs out of the refrigerator at least 20 minutes before roasting and pat them thoroughly dry before seasoning—the dry skin will crisp up in the oven.
