One-pan chicken thighs with rice and vegetables make an easy lunch, with the meat and side dish baking together. Briefly simmer the rice with sautéed onions, carrots, and corn, then transfer to a roasting pan, pour in broth, and arrange the seasoned thighs on top. Bake for 40 to 50 minutes at 200°C (400°F). You can use chicken breasts or wings instead of thighs, and there is enough to serve six people.

Instructions
Tip: tap a step to mark it as done.
Pat the chicken thighs dry, season to taste, and let rest briefly.
Peel and chop the onions and carrots, then sauté in oil. Add the corn with its liquid and the rice, and simmer briefly in the skillet.
Transfer the vegetable mixture to a roasting pan and pour in water or broth.
Arrange the thighs over the vegetables in the roasting pan, cover with aluminum foil, and bake at 200°C (400°F) for about 40 minutes. Remove the foil and bake for another 10–15 minutes.
Tip: Arrange the thighs skin-side up on the rice without pressing them into the liquid so the skin browns better once uncovered. If the rice is still swimming in broth at the end, leave the pan uncovered in the oven until the liquid is absorbed.
