Baked curry chicken thighs with sour cream and rice make a warm dinner for four, with the oven doing most of the work. The thighs marinate for half an hour in sour cream with curry powder and black pepper. Rice, finely chopped onions, and carrots go into a baking dish with water, then the chicken is arranged on top and the dish is covered with aluminum foil. Bake for an hour at 180°C (350°F), then uncover for another ten minutes to brown the chicken.

Instructions
Tip: tap a step to mark it as done.
- Mix the sour cream with the curry powder and black pepper. Coat the chicken with the mixture and refrigerate for 30 minutes.
- Finely chop the onions and carrots, place them in a baking dish, and add the rice, water, and salt.
- Arrange the chicken thighs on top and cover the dish with aluminum foil. Bake at 180°C (350°F) for 1 hour, then remove the foil and bake for another 10 minutes.
Tip: Seal the foil tightly around the edges of the dish to keep steam from escaping and help the rice cook evenly. Add a pinch of curry powder to the rice water for a light yellow color.
