Buckwheat with chicken is a simple one-skillet lunch: brown pieces of boneless chicken thighs with vegetables, then simmer the buckwheat with them in broth until tender. The thigh meat stays juicy, and the buckwheat absorbs the flavor of the pan juices.

Instructions

Tip: tap a step to mark it as done.

  1. Brown the chicken

    10 min

Pat the chicken dry with a paper towel, cut it into pieces, and season with salt. Brown it on all sides in the oil until golden.

  2. Add the vegetables

    5 min

Add the finely chopped onion, sliced carrots, and bell pepper cut into pieces, and cook for 5 minutes. Stir in the pressed garlic and ground paprika.

  3. Simmer with the buckwheat

    20 min

Add the rinsed buckwheat, pour in the hot broth, and season with black pepper. Cover and simmer over low heat for 15–20 minutes, until the buckwheat has absorbed the liquid and is tender.

  4. Serve

Let stand, covered, for 5 minutes, then fluff with a fork and serve sprinkled with parsley.

Tip: Do not stir the buckwheat while it simmers, or it will turn mushy. Just fluff it gently with a fork at the end.
