Buckwheat with chicken liver is a hearty dish of cooked hulled buckwheat, button mushrooms sautéed with onion, and chicken liver seared in butter. The buckwheat cooks in a ratio of one part grain to two parts water, then rests covered until the grains are fluffy and separate rather than mushy.

Instructions

Tip: tap a step to mark it as done.

  1. Cook the buckwheat

    25 min

Rinse the buckwheat in a strainer under cold water. Place it in a saucepan with 400 ml water and the salt and bring to a boil. Cover and cook over low heat for 15 minutes, then remove from the heat and let stand, covered, for 10 minutes to finish cooking.

  2. Sauté the mushrooms and onion

    10 min

Finely chop the onion and slice the mushrooms. Heat 1 tbsp of the oil and sauté the onion until translucent. Add the mushrooms and sauté for 5–7 minutes, until the liquid evaporates and they begin to brown.

  3. Sear the liver

    8 min

Pat the liver dry with a paper towel, trim off any membranes, and cut into smaller pieces. Heat the remaining oil with the butter and sear the liver over high heat for 5–6 minutes, until cooked through and the juices are no longer pink when a piece is cut open. Season with salt and pepper only at the end.

  4. Combine and serve

Fluff the buckwheat with a fork, mix with the mushrooms and onion, and divide among plates. Top with the liver and the pan juices, then sprinkle with parsley.

Tip: Fluff the cooked buckwheat with a fork instead of stirring it with a spoon to keep the grains whole and separate. Unroasted hulled buckwheat has a milder flavor than roasted buckwheat.
