These Australian-style potatoes with fresh rosemary are boiled in their skins, smashed on a baking sheet, and baked until golden. After brushing each potato with olive oil, gently press it with a spoon to form a thick patty, then sprinkle with chopped rosemary, sea salt, and pepper. Bake in an oven preheated to 230°C (450°F) for 20 to 25 minutes. Serve hot with sour cream or fresh vegetables as a dinner or side dish.

Instructions
Tip: tap a step to mark it as done.
Boil the whole, unpeeled potatoes in salted water until a fork slides into them as easily as into butter.
Preheat the oven to 230°C (450°F).
Brush the whole potatoes with olive oil on all sides and arrange them on a baking sheet so they do not touch. Using a spoon, gently press each tender potato into a thick patty without crushing it completely. Brush the potatoes with olive oil again and sprinkle with chopped rosemary or other aromatic herbs, if desired.
Bake at 230°C (450°F) for 20–25 minutes, until golden. Serve hot with sour cream or fresh vegetables.
Tip: Dip the spoon in oil before pressing each potato so it won't stick and the smashed potato stays intact. Reheat leftovers in a dry skillet to make them crisp again.
