Hasselback potatoes with herbs and sea salt are whole potatoes cut into thin slices that remain attached at the bottom. Brush them with a mixture of olive oil, sea salt, pepper, herbs, and garlic that runs between the slices, then bake at 230°C (450°F) for 45 to 60 minutes, depending on their size. They need only a small amount of oil, making them a good alternative to French fries with dinner.

Instructions

Tip: tap a step to mark it as done.

  1. Wash and clean the potatoes. Cut them into thin slices without cutting all the way through, so they stay together, and transfer to a baking sheet.
  2. Mix the oil with the sea salt, pepper, herbs, and garlic, then brush the mixture over the potatoes.
  3. Bake at 230°C (450°F) for approximately 45 to 60 minutes, depending on the size of the potatoes.

Tip: Place each potato between two wooden spoons so the knife stops against them without cutting all the way through. Reserve some of the oil mixture and brush it over the potatoes halfway through baking, once the slices have opened up.
