These oven-roasted smashed potatoes with rosemary and garlic are boiled whole, cooled, gently flattened with a spoon, and finished in the oven. Each potato should split but not fall apart. They are drizzled with olive oil, butter, garlic, and dried rosemary and roasted at 180–200 °C (350–400 °F). The original recipe calls for new potatoes, but other thin-skinned potatoes work too. This recipe serves four as a side dish or a dinner on its own.

Instructions
Tip: tap a step to mark it as done.
- Tip: Use new potatoes, as recommended in the original recipe, or any thin-skinned potatoes.
- Wash the potatoes thoroughly and boil until tender. Set aside and let cool.
- For the most important step, gently press each potato with a spoon so it splits but does not fall apart.
- Drizzle olive oil over the bottom of a baking pan. Scatter the chopped garlic evenly over the pan.
- Arrange the potatoes in the pan, season with salt, preferably sea salt, and sprinkle with rosemary. If fresh rosemary is unavailable, use dried.
- Cut the butter into cubes and place 1–2 cubes on each potato. Drizzle with more olive oil as needed.
- Preheat the oven to 180–200 °C (350–400 °F) and roast the potatoes until golden brown. Drizzle with the aromatic oil at the end, if desired.
- Skip other seasonings, such as paprika or black pepper; the rosemary and garlic give the potatoes plenty of flavor. Tip: Sprinkle the finished dish with green onions before serving, if desired.
Tip: The bottom of a glass flattens the potatoes more evenly than a spoon and helps keep them from falling apart. The more cracks in the surface, the more crispy edges will form in the oven.
