Potato wedges with garlic, herbs and wine vinegar make an inexpensive, simple dinner using everyday ingredients. The wedges are first boiled for about 20 minutes in water with wine vinegar and salt, giving them a slightly tangy flavor. They are then pan-fried in butter with salt and pepper for another 8 to 10 minutes. To serve, they are drizzled with vinegar and sprinkled with chopped garlic and fresh herbs. Enjoy them on their own or as a side dish.

Instructions

Tip: tap a step to mark it as done.

  1. Gather the potatoes, garlic, vinegar, butter, seasonings, and herbs.

  2. Cut the potatoes into wedges. Peel and chop the garlic. Reserve 2 tbsp of the cup of vinegar for drizzling, then pour the rest into a pot with the potatoes. Add 1 tsp salt and a little water, and bring to a boil. Cook for about 20–25 minutes, until tender, then drain.

  3. Heat the butter in a skillet, add the cooked potatoes, and season with salt and pepper. Pan-fry for 8–10 minutes, stirring constantly.

  4. Transfer the potatoes to a plate, drizzle with the reserved vinegar, and garnish with garlic and herbs to taste.

Tip: Cut the wedges to an even thickness so they become tender at the same time. Vinegar in the water slows softening, so test them with a fork before draining—they should be tender but not falling apart.
