These Hasselback potatoes with cheese, bacon and smoked sausage are baked in their skins with closely spaced cuts about 2–3 mm apart that do not go all the way through. Brush the potatoes with oil seasoned with salt and pepper, working it into the cuts, and bake at 200 °C (400 °F) until tender. Then tuck alternating slices of cheese, bacon, smoked sausage and onion into the cuts and return the potatoes to the oven. The entire dish serves four and is made on one baking sheet.

Instructions

Tip: tap a step to mark it as done.

  1. Leave the potatoes unpeeled and wash them thoroughly. Make cuts 2–3 mm apart, slicing about three-quarters of the way through rather than all the way down. Keep the bottom of each potato intact so it holds together.
  2. Arrange the potatoes on a baking sheet lined with parchment paper. Mix the oil, salt and pepper in a bowl, then brush each potato with the mixture, working it into the cuts. Bake in a preheated oven at 200 °C (400 °F) until tender, about 35–40 minutes.
  3. Meanwhile, prepare the filling: thinly slice the cheese, bacon and smoked sausage, and cut the onions into rounds. Tuck the sliced ingredients into the cuts in the tender potatoes, alternating them. Return the stuffed potatoes to the oven at the same temperature and bake for another 15 minutes, until crisp on the outside.

Tip: When cutting the potatoes, hold each one steady with a fork inserted into the side to keep your fingers away from the knife and prevent the potato from slipping.
